POTATO BREAD

Ingredients :

(A)
600g bread flour
70g sugar
1 1/2 teaspoons salt
1 1/2 tablespoons milk powder
4 teaspoons instant yeast

(B)
1 egg
270ml cold water

(c)
120g mashed potato*
60g butter

(D)
Custard



Method :

1. Mix (A) till well blended. Add (B) and knead to form a dough.
2. Add (C), continue to knead to form a smooth and elastic dough.
3. Make the dough into a ball. Put in a bowl and cover with clear film. Put in a warm place to prove for 45 minutes.
4. Mould the dough into a balll and leave it to rest for a further 15 minutes.
5. Divide the dough into several 30g pieces. Mould them into balls and put them on a greased 23cm square baking pan, 16 pieces per pan. Makes 2 pans.
6. Cover and leave to prove for 40 minutes or till twice the size.
7. Brush with egg wash and pipe the custard to make a cross on top.
8. Bake at 180 C for 25 minutes on the lower shelf of the oven. Serve.

** As the dough is a bit sticky, put some flour on your hands before you start to make into balls.

SWEET BUN



Ingredients :

900 g bread flour
100 g superfine flour/cake flour
430 g water (+/-)
20 g instant yeast
12 g salt
180 g sugar
40 g butter
60 g margarine
150 g egg (=/- 2 grade B eggs)
10 g (2 teaspoons) bread improver
5 g bread softener
30 g milk powder
10 g vanilla essence

Method :

1. If using a Bread Maker, just put all the ingredients according to the bread maker's instruction (the liquid should go in first, then the dry ingredients and lastly the instant yeast).
2. Set the kneading programme for 30 minutes.
3. Take out the dough and leave it to prove till double it's size.
4. Punch down the dough and shape it.
5. Leave to prove till double the size .
6. Brush with egg and bake at 160 Celcius for 18 - 20 minutes.

SOFT BUTTER BUNS



Ingredients
:

250g high protein/bread flour
50g superfine flour
50g castor sugar
1 teaspoon salt
2 1/2 tablespoons milk powder
1 1/2 teaspoons instant yeast
1 small egg
30g butter ~ room temperature
140ml water

Glazing :
1 egg ~ lightly beaten
Melted butter, for brushing

Method :
1. Combine all ingredients, except butter and knead till a dough is formed.
2. Add butte and continue kneading till a smooth, soft and elastic dough is formed.
3. Prove the dough for about 2 hours.
4. After first proving, knead the dough lightly and divide the dough into small even sizes. Rest for 10 minutes. At this stage, you can add filling of your choice.
5. Place buns in a greased and floured square tin and prove until double in size.
6. Preheat oven at 200 degree Celcius.
7. Brush buns with egg wash and bake for about 15 minutes or until brown.
8. Remove from oven and brush with melted butter.
9. Cool buns in tin for 5 minutes before turning out onto a wire rack.

MEE JAWA



Bahan:

1 kg mee kuning (dicelur)
1/2 kg. daging [rebus lembut dan hiris nipis]
300gm tauge (buangkan kakinya)
2 tangkai daun bawang (dihiris)
5 biji cili merah (dihiris)
3 keping tauhu goreng (dihiris nipis)
3 biji telur rebus (dibelah)
3 biji limau nipis (dibelah)
Sedikit bawang goreng

Bahan Kuah:

1/2 kg keledek (direbus & dikisar)
3 ulas bawang putih ]
5 ulas bawang merah ]
3 batang serai ] mesin halus
Sedikit halia ]
sedikit lengkuas ]
230 gm udang kering ]
2 s/b cili kisar
2 s/b serbuk kari daging
air rebusan daging
Sedikit garam
Sedikit minyak masak
Sedikit gula

Cara:

1. Panaskan minyak masak dalam periuk. Tumiskan bahan yang dimesin, rempah & cili kisar hingga garing.
2. Masukkan keledek. Tambahkan air rebusan daging mengikut kepekatan yang diinginkan.
3. Akhir sekali, masukkan garam & gula. Biarkan hingga kuah mendidih.
4. Angkat dan hidangkan dgn bahan yg dihiris.

Mee Hailam

Bahan:

300 gm mee
½ cawan tauge
5 batang sawi
100 gm kerang
200 gm udang basah
5 sudu kicap
1 sudu tepung ubi
10 ulas bawang putih
20 ulas bawang merah
1 sudu besar cili boh
3-4 sudu minyak

Kaedah :

Tumbuk bawang merah & putih.

Panaskan minyak & tumiskan bawang bersama cili boh. M

asukkan kicap, tepung ubi & cawan air.

Masukkan mee, tauge, kerang, udang & sawi, kacau hingga masak lalu diangkat.

Hiaskan dengan bawang goreng, telur rebus (jika suka) dan cili merah.

CHAR KUE TIAW


Bahan-Bahan:

500 gm kuetiaw
300 gm udang [buangkan kulit]
1 ikat daun kucai [dipotong 1 inci ]
1 cawan taugeh
1 tauhu basah [goreng dan potong kecil]
2 sudu besar cili mesin
4 ulas bawang putih [ketuk]
4 sudu besar kicap pekat
2 s/b sos tomato
2 s/b air
1 biji tomato [potong kecil]
sedikit minyak garam [jika perlu]

Cara:
1. Panas minyak dan tumiskan bawang putih hingga berbau wangi.
2. Masukkan cili mesin dan kicap.
3. Masukkan udang, tomato sos dan air. Kacau rata.
4. Pecahkan telur dan biarkan keras sebentar. Kacau sebati.
5. Masukkan kuetiaw, tomato buah, tahu, taugeh dan kucai. Kacau rata dan tutup api.
6. Hidangkan dengan lada jeruk

Pejeri Nenas

Ingredients:

Pineapple ~ cleaned and sliced
Shallots ~ pounded
Garlic ~ pounded
Fresh Ginger ~ pounded
Dried shrimp ~ soaked and pounded
Curry powder
Cinnamon stick
Coconut milk
Salt
Sugar
Fresh red chillie
Cooking oil

Method :

1. Heat oil in a pot and add in cinnamon stick, pounded shallots, garlic and ginger. Fry till fragrant.
2. Add in curry powder and stir well. Add a bit of water.
3. Add in pounded dried shrimp.
4. Pour in coconut milk. Stir well.
5. Put in the sliced pineapple and add sugar and salt to taste.
6. Finally put in the red chillie.

Kuih Siput

Bahan :

1kg tepung gandum
300gm tepung ubi
2 biji telur
1 sudu makan cili boh
5 sudu makan serbuk kari
1 senduk margerin (dicairkan dlm periuk)
Daun kari (dihiris halus, lagi banyak lagi sedap)
garam secukup rasa
ajinomoto penambah perisa

Cara:
Masukan kesemua bahan tadi kecuali margerin, gaul hingga semuanya sebati, kemudian masukan margerin tadi, uli hingga ianya menjadi doh yang lembut.

Cubit sedikit dan gelekan pada acuan kuih siput hingga terbentuk seperti siput, buat hingga tepung habis.
Panaskan minyak dan goreng hingga kuning.

Anggaran untuk 1 1/2kg.

Batang Buruk

Bahan:

Kulit popia
2 sudu besar gula
4 sudu besar nestum honey
6 sudu besar susu powder

Cara :

Sekeping kulit popia dipotong 4*3
Kemudian gulung ikut straw dan digoreng
Selepas digoreng, biarkan ia sejuk dahulu.
Bagi bahan-bahan tadi, nestum dan gula dikisar sehingga betul2 halus.
Masukkan susu powder pada adunan tadi dan dikisar sekali lagi.
Ambil popia yang dah sejuk dan digaul dengan bahan-bahan yang dikisar tadi. Siap untuk dihidang.

Cake : Tiramisu



INGREDIENTS

6 egg yolks
3/4 cup white sugar
2/3 cup milk
1 1/4 cups heavy cream
1/2 teaspoon vanilla extract
1 pound mascarpone cheese
1/4 cup strong brewed coffee, room temperature
2 (3 ounce) packages ladyfinger cookies
1 tablespoon unsweetened cocoa powder


DIRECTIONS

In a medium saucepan, whisk together egg yolks and sugar until well blended. Whisk in milk and cook over medium heat, stirring constantly, until mixture boils. Boil gently for 1 minute, remove from heat and allow to cool slightly. Cover tightly and chill in refrigerator 1 hour.

In a medium bowl, beat cream with vanilla until stiff peaks form. Whisk mascarpone into yolk mixture until smooth.

In a small bowl, combine coffee. Split ladyfingers in half lengthwise and drizzle with coffee mixture.
Arrange half of soaked ladyfingers in bottom of a 7x11 inch dish. Spread half of mascarpone mixture over ladyfingers, then half of whipped cream over that.
Repeat layers and sprinkle with cocoa. Cover and refrigerate 4 to 6 hours, until set.

Donut

Bahan-Bahan:

1 bungkus yis Mauripan (11gram)dicampur dengan 1 cawan air
½ kilo tepung gandum
1 ½ camca besar mentega
1 ½ camca besar gula
2 camca besar susu tepung
Secubit tepung penaik
Secubit garam

Cara:

1.Masukan kesemua bahan kering. Gaul rata.
2.Lembutkan mentega dan gaul dengan bahan kering.
3.Masukkan yis yang telah dibancuh dengan 1 cawan air.
4.Uli adunan sehingga menjadi doh yang lembut. Tambah air sekiranya adunan sedikit keras.
5.Rehatkan adunan selama 15 minit.
6.Terap doh menjadi bentuk donut.
7.Gorengkan didalam minyak sederhana panas dan api hendaklah kecil supaya donut tidak garing.
8.Golekkan donut yang siap digoreng (panas²) kedalam mangkuk yang berisi gula aising.

Cadangan Hidangan:

Donut yang telah dimasak boleh juga dicelup ke dalam coklat masakan yang telah dicairkan.

Cake : Carrot Cake



INGREDIENTS

4 eggs
1 1/4 cups vegetable oil
2 cups white sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
3 cups grated carrots
1 cup chopped pecans

1/2 cup butter, softened
8 ounces cream cheese, softened
4 cups confectioners' sugar
1 teaspoon vanilla extract
1 cup chopped pecans


DIRECTIONS

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.

In a large bowl, beat together eggs, oil, white sugar and 2 teaspoons vanilla. Mix in flour, baking soda, baking powder, salt and cinnamon. Stir in carrots. Fold in pecans. Pour into prepared pan.

Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
To Make Frosting:
In a medium bowl, combine butter, cream cheese, confectioners' sugar and 1 teaspoon vanilla. Beat until the mixture is smooth and creamy. Stir in chopped pecans. Frost the cooled cake.

Cake : Chocolate Chip



INGREDIENTS

1 cup shortening
2 cups sugar
4 (1 ounce) squares unsweetened chocolate, melted and cooled
2 teaspoons vanilla extract
5 eggs
2 1/4 cups cake flour
1 teaspoon baking soda
1 teaspoon salt
1 cup buttermilk
2 cups semisweet chocolate chips

FROSTING:

2/3 cup butter, softened
5 1/3 cups confectioners' sugar
1 cup baking cocoa
1 cup milk
2 teaspoons vanilla extract


DIRECTIONS

In a large mixing bowl, cream shortening and sugar until light and fluffy. Add chocolate and vanilla; mix well. Add eggs, one at a time, beating well after each addition. Combine the flour, baking soda and salt; add to creamed mixture alternately with buttermilk. Fold in the chocolate chips.

Pour into three greased and floured 9-in. round cake pans. Bake at 350 degrees F for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.

For frosting, in a large mixing bowl, cream butter until light and fluffy. Combine sugar and cocoa; add to creamed mixture alternately with milk. Add vanilla; beat well. Spread frosting between layers and over top and sides of cake.

Cake : Chocolate Trifle



INGREDIENTS

1 (19.8 ounce) package brownie mix
1 (3.9 ounce) package instant chocolate pudding mix
1/2 cup water
1 (14 ounce) can sweetened condensed milk
1 (8 ounce) container frozen whipped topping, thawed
1 (12 ounce) container frozen whipped topping, thawed
1 (1.5 ounce) bar chocolate candy


DIRECTIONS

Prepare brownie mix according to package directions and cool completely. Cut into 1 inch squares.

In a large bowl, combine pudding mix, water and sweetened condensed milk. Mix until smooth, then fold in 8 ounces whipped topping until no streaks remain.

In a trifle bowl or glass serving dish, place half of the brownies, half of the pudding mixture and half of the 12 ounce container of whipped topping. Repeat layers. Shave chocolate onto top layer for garnish. Refrigerate 8 hours before serving.

Kuih Raya : Semperit

Bahan :

6 sudu tepung gandum.
3 sudu tepung kastard.
1/2 sudu tepung jagung.
3 sudu gula halus.
5 sudu marjerin.
1/2 sudu teh baking powder.
1 biji telur ayam..

Cara :

Tepung gandum, tepung kastard dan tepung jagung di ayak dengan baking
powder. Pukul marjerin dengan gula hingga kembang dan putih.

Masukkan tepung sedikit demi sedikit kedalam adunan marjerin dan uli hingga
sebati.

Masukkan kedalam acuan samprit dan tekan ke atas dulang pembakar.

Hiaskan dengan ceri yang telah dipotong kecil ke atasnya.

Kuih Raya : Biskut Arab

Bahan :

1 paket tepung gandum
1 cawan tepung susu ( penuh kirim )
1 cawan gee
1 cawan planta
3 cawan gula yang dimesin halus

Cara :

Tepung gandum digoreng terlebih dahulu sehingga kekuningan jgn tertalu
garing.

Ayak tepung gandung tadi, masukan tepung susu dan gaulkan. Masukan sikit
demi sedikit gee (minyak sapi) dan planta gaul sehingga ia menjadi doh.
Sekiranya doh tidak cukup lembut boleh tambahkan gee atau planta..

Kemudian bulat bulatkan mcm guli dan bakar lebih kurang 10-15 minit (ini kerana
tepung tadi telah digoreng) sehingga ia masak keluarkan dari oven terus
masukan dalam gula yang telah dimesin (serbuk). Gaulkan ia semasa masih
panas.

Kuih Raya : CRISPY CORNFLAKE CHOCOLATE

Bahan :

280 g cornflakes
180 g madu
140 g mentega
100 g hirisan badam, dibakar
200 g coklat masakan dicairkan atas 'double-boiler


Cara memasak:

Cairkan mentega dan madu kemudian biar sejuk. Gaul dengan cornflakes dan badam. Masukkan ke dalam mangkuk kertas dan bakar pada 150 C selama 10 minit. Bila sejuk, titiskan coklat cair di atasnya sebagai hiasan.



Kuih Raya : Tat Nenas Gulung

Bahan (Ingredients):

Bahan A
1 Kg tepung gandum
1 Ketul buttercup
2 Biji telur
2 Biji kuning telur (untuk disapu)
2 Sudu teh esen vanila
2 Sudu teh esen nenas
Majerin untuk melembutkan doh

Bahan B
1 Biji nenas
1 ½ Cawan gula
4 Kuntum bunga cengkih
Sehelai daun pandan

Cara memasak (Cooking Instruction) :

Gaulkan semua bahan A dan uli hingga lembut untuk dijadikan doh.

Masak semua bahan B sehingga pekat dan sejukkan.

Masukkan doh ke dalam acuan tart dan tekan, kemudian letakkan jem nenas di atasnya dan gulung.

Sapukan kuning telur diatasnya untuk nampak lebih berseri, dan bakar.

p/s: Di dalam doh tidak perlu di letakkan gula, kerana jem nenas sudah mempunyai rasa manis.
