GULAI atau KARI AYAM



Bahan

1 ekor ayam [dipotong 12 dibersihkan & ditoskan]
1/2cawan minyak masak
3 sudu besar rempah kari daging
1 sudu kecil serbuk jintan manis
1 sudu besar serbuk cili atau cili mesin
2 sudu besar kerisik
2 cawan santan [1/2 biji kelapa]
5 biji ubi kentang [belah 4]
3 biji tomato [belah 4]
1/2 cawan jus asam jawa
garam

BahanTumis:

6 ulas bawang merah (dimayang)
4 ulas bawang putih (dimayang)
3 cm halia (dimayang)
3 tangkai daun kari
3 cm kulit kayu manis
5 kuntum bunga cengkih
2 kuntum bunga lawang
3 biji buah pelaga

Cara:

1. Panaskan minyak dan tumiskan bahan tumis sehinga wangi.
2. Masukkan rempah kari, jintan manis dan serbuk cili/cili mesin yg dibancuhkan dengan jus asam jawa. Kacau rata dan biarkan hingga pecah minyak.
3. Masukkan ayam, kentang , santan, kerisek dan garam. Biarkan sehingga mendideh dan ayam & kentang empuk/lembut.
4. Perlahan api dan masukkan tomato dan biarkan sehingga naik minyak.
5. Hidangkan bersama nasi atau roti atau pulut/ketupat.

DAGING KICAP BEREMPAH

1 kg daging lembu/kambing (potong ikut suka)
(Rebus hingga 3/4 empuk. Biar lebihkan airnya utk digunakan nanti)

12 tangkai cili kering (rendam)
3 sudu teh lada hitam
2 sudu teh jintan halus
1 sudu teh jintan kasar
2 biji pelaga (gunakan isinya saja)
2 biji bawang besar
5 ulas bawang putih
1 inci halia
1/2 biji buah pala (I omitted sbb takde dlm stok)
(Kisar semua bahan di atas hingga halus)

2 biji bawang besar (potong gegelang (rings) dan goreng sebentar)
6 sudu besar sos tomato
5-6 sudu besar kicap lemak manis
3 biji kentang (dipotong wedges)
3 biji tomato buah (setiap biji potong 2 atau 4)
1 btg lobak merah (dipotong kecil2)
3 sudu besar bawang goreng (optional)
sedikit daun ketumbar
secubit garam, sedikit gula
minyak utk menumis

Cara:
Panaskan minyak dalam periuk. Tumis bahan-bahan kisar hingga garing. Masukkan daging bersama air rebusannya, lobak merah, sos tomato, kicap manis, garam dan gula. Sesuaikan rasanya. Bila daging sudah empuk, masukkan bawang goreng, gegelang bawang & kentang wedges dan kacau sebentar. Akhir sekali masukkan tomato buah dan daun ketumbar. Kacau sebentar dan kemudian matikan api. Hidangkan dgn nasi atau roti.

AYAM PERCIK LADA HITAM



Bahan

1 ekor ayam [belah 4]
2 cawan santan [1 biji kelapa]
1 batang serai [ketuk]
3 keping asam keping
garam

Bahan Mesin
1 s/b lada hitam
5 tangkai ciliapi
5 ulas bawang merah
2 ulas bawang putih
5 cm halia
2 cm lengkuas
2 cm kunyit
3 batang serai

Cara
1. Bersihkan ayam.
2. Masukkkan semua bahan dalam kuali dan biarkan mendideh.
3. Keluarkan ayam dan masukkan dalam loyang.
4. Bakar dalam oven pada suhu 200'C selama 20 minit [gunakan api atas]
5. Masskkan kuah yg lebihan sehinga agak pekat.
6. Bila ayam telah garing boleh hidangkan dengan kuahnya.

Sweet and Sour Fish in Fruity Sauce

Ingredients

600g fish fillet, cut into thick strips
1 egg, slightly beaten


Mixed

3/4 cup corn flour
1 tbsp rice flour
1 tbsp oil

Ingredients (A) – combined

1/2 tsp sugar
1 sachet TUMIX Ikan Bilis Cooking Base
Seasoning
1/2 tsp pepper

Sauce ingredients (B) – combined

3 tbsp tomato sauce
1 tbsp oyster sauce
1 tbsp lemon juice
2 tbsp chilli sauce

Ingredients (C)

1/2 onion, cut into wedges
1 red chilli, sliced
2 kiwi fruits, cubed
1/2 Fuji red apple, cored and cubed


Method

Marinate fish with combined ingredients (A). Add in beaten egg. Roll in corn flour mixture and deep-fry until golden brown. Remove and place in a clean platter.

Heat oil and add in sauce ingredients (B). Bring to a simmering boil. Add in (C). Dish out and pour over fish slices. Mix in kiwi fruit and apple.

Grilled Chicken with Sweet Potato-Lime Sauce

Ingredients:
Juice of 1 lime

1/4 cup fresh orange juice

1/2 teaspoon turmeric (optional)

1/2 teaspoon ground cumin

1/2 teaspoon ground coriander

Salt and freshly ground pepper, to taste

4 boneless, skinless chicken breasts (about 1 1/4 pounds total), washed and patted dry

Sauce:

1/2 cup water

3 garlic cloves, peeled, minced

1 teaspoon minced fresh ginger

4 green onions, washed, ends removed, sliced

1/2 teaspoon ground cumin

1/2 teaspoon ground coriander

3/4 pound (about 1 medium) sweet potato, peeled and diced small

1 (14 ½-ounce) can fat-free, reduced-sodium chicken broth

Juice and grated rind of 1 lime

Few drops of lemon juice

1/4 cup fresh chopped cilantro

Additional green onion slices and cilantro sprig for garnish if desired

Recipe Method:

In a small baking dish or pie plate, mix the orange juice, turmeric, cumin, coriander, salt and freshly ground pepper. Add chicken, turning to thoroughly coat it. Set aside while preparing the sauce.

In a large skillet, place the water, garlic, ginger, green onions, cumin, coriander and sweet potato. Cover and cook over medium heat about 7 to 10 minutes. If mixture seems to dry, add more water as necessary to prevent the ingredients from sticking to the pan. Uncover and cook about 3 minutes or until the sweet potato is tender.

Transfer the mixture to a blender or food processor and process until smooth. Return to the skillet and whisk in the chicken broth, lime and lemon juices and chopped cilantro. Keep the sauce warm over low heat.

Remove the chicken from the marinade; discard the marinade. Grill the chicken in a grill pan over medium heat about 5 minutes per side depending on the thickness or until chicken is cooked through. Alternately, pan sauté or broil the chicken breasts.

Serve garnished with green onion slices and cilantro. Makes 4 servings.

Low Fat Vegetable Lasagna

Ingredients:

9 lasagna strips

4 C. mixed fresh vegetable (cauliflower florets, thinly sliced carrots, small strips green pepper, etc.)

1/4 pkg. Knorr's leek soup (dry)

1 (18 oz.) jar (or homemade) meatless spaghetti sauce

12 oz. low-fat, part skim milk Ricotta cheese

Recipe Method:

Preheat oven to 400° F. Boil lasagna strips less than
full cooking time on package.

Mix vegetables with soup. In 9 x 13-inch glass baking dish, spread small amount of sauce. Put 3 strips of lasagna noodles on top. Spread 1/3 of the cheese on the lasagna and pour 1/2 of the vegetables on top. Pour more sauce on top of the vegetables. Repeat lasagna, Ricotta, vegetables and sauce. End with lasagna. Pour rest of sauce and cheese on top. Marble with rubber spatula.

Bake for 1 1/2 hours or until top browns.

Can be made ahead, covered with foil and left in warm oven for several hours before serving.

Serves 6.

Tropical Fruit and Pasta Salad Recipe

RECIPE INGREDIENTS

1 (9-oz.) package Buitoni refrigerated Linguine
2 cups vanilla yogurt
1/4 cup honey
1/2 teaspoon ground ginger
4 cups assorted fresh fruit (pineapple chunks, sliced strawberries, diced papaya or mango and/or sliced kiwifruit)
1/4 cup shredded coconut, toasted

RECIPE METHOD

Cook, rinse and drain pasta according to package directions.

Combine yogurt, honey and ginger in medium bowl. Toss with pasta; transfer to large serving platter. Arrange fruit over pasta; sprinkle with coconut.

Kuah Lodeh

Bahan-Bahan:

Minyak masak
20 gm suhun
100 gm fucuk
3 keping tauhu (didadu)
200 gm tempe (dihiris nipis)
80 gm udang kering
1 liter santan
2 batang serai (dititik)
1 helai daun kunyit (disimpul)
100 gm lobak merah (dihiris jejari)
100 gm kubis bunga (dihiris kasar)
Garam
Gula

Bahan dikisar:

150 gm bawang merah
50 gm bawang putih
80 gm kunyit hidup
50 gm cili kering (direndam dahulu)

Cara:

Goreng berasingan tauhu dan tempe hingga garing. Panaskan sedikit minyak dan tumis bahan dikisar hingga naik bau.

Masukkan udang kering dan kacau seketika. Bubuh santan, serai, daun kunyit, sayur-sayuran, bahan-bahan digoreng, garam dan gula (jika suka).

Kacau hingga kuah pekat dan mendidih. Angkat. Hidangkan bersama ketupat nasi.


Kuah Kacang

Bahan-Bahan:
1 kg kacang tanah
4 sudu besar cili kisar
3 biji bawang besar
5 ulas bawang merah
2 keping asam keping
Garam secukup rasa
Gula melaka dan Gula secukup rasa
1 batang serai (dititik)
Sedikit lengkuas
Sedikit minyak untuk menumis

Cara:
Goreng kacang tanah tanpa minyak sehingga garing. Buangkan kulit arinya dan tumbuk sama ada halus atau kasar.

Kacang tersebut kemudiannya direbus dengan air sehingga empuk dan naik minyak – api perlahan.

Tumis bawang besar, bawang putih, bawang merah, cili yang telah dikisar sehingga naik baunya.

Masukkan kacang, garam dan gula secukup rasa. Gaul rata dan biarkan ia mendidih.

Masukkan asam keping, lengkuas dan serai, masak sehingga agak pekat.

Angkat dan hidangkan bersama ketupat nasi.

Rendang Ayam Istimewa

Bahan-bahan:-
- 1 ekor ayam dipotong ikut suka
- Ciliboh
- Bwg kecil 8 biji (dikisar)
- Bwg putih 5 biji (dikisar)
- Lengkuas seruas jari manis (dikisar)
- Kunyit seruas jari manis (dikisar)
- Halia seruas ibu jari (dikisar)
- Serai 3 batang (dikisar)
- Daun kunyit 1 helai dan daun limau 2 helai (dimayang halus)
- 2 sudu besar penuh kerisik
- Santan pekat

Cara:-

1. Tumiskan kesemua bahan yg dikisar dan ciliboh. Kacau sebati dan biarkan cili sedikit masak.

2. Masukkan ayam balik balikkan dan biar sampai keluar air ayam. Kacau sekali sekala supaya tak hangus dibawahnya.

3. Masukkan santan.

4. Bila kuah agak pekat masukkan kerisik. Gaulkan biar rata. Kemudian masukkan daun kunyit, garam dan ajinomoto.

5. Biar kuah agak pekat dan pecah minyak barulah dipadamkan api.
